The Great Preyer Bakeoff: Cupcakes!

I had the opportunity to step out of my cookie comfort zone as I participated in The Great Preyer Bakeoff Cupcakes edition, hosted by Preyer Brewing Company. Naturally, I went with my poundcake cupcakes, and added a strawberry buttercream for my icing!



It's been a while since I've participated in a true competition. 

When I was in elementary school, I ran for student body president. Long story short, I lost...in a tie-breaker...to one of my good friends. 

Devastating I tell ya! All the tears. Clearly never recovered...

Strawberries. My favorite of all the berries. I bought two cartons, one for my icing and one for my belly.


Do y'all remember when I made those pistachio cranberry energy bites? So yum, I practically ate them all and burned up my food processor so I had to borrow Mom's for the icing. A blender would work great, too!  

 

Or that one time I entered the science fair at my school. My project was testing the water in different areas of the county. I'm not sure what my conclusion was, or where I was really headed with my findings, but I came in 3rd place so that's like a mini win, right?


Any chance I have of getting a photo of my egg crate I take it. I just love it! It's so funny the things you get excited about as an adult...or sad lol.

I call these two the dynamic duo, and I bet Paula Dean would agree with that nickname! #ButterAndCrisco



And don't even get me started on the countless soccer games and tournaments growing up. If you've ever seen me use the hashtag #BubbaBakes, it comes from my nickname "Bubba" that I received during my soccer days. Let's just say, win or lose, I wasn't going down without a good fight! I was known for my card collection--yellow and red cards penalty cards, that is...






Needless to say, Preyer's cupcake battle was a change a pace for me. Such a fun experience, and for a good cause! All the proceeds benefitted Backpack Beginnings, an organization that ensures food and basic necessities are given directly to children in need. 






I may not have placed within the competition, but with my family and friends there to support me, and the fact that my baby cakes were the first to get gone, I still felt like a winner (insert sassy girl emoji)!

Who knew refrigerator lighting was so good? It's probably because mine is so empty!

Clearly I'm the worst because this is the only photo I got at the bakeoff--I guess one is better than none!

"Something Old Is Something New Again!"

"Something old is something new again" is a saying that holds true in my home.

For the past 2+ (almost 3!) years that I’ve lived at The Mint Cottage, everything inside it has played a role in turning this house into my sweet home. Some of my favorite pieces are actually "vintage" family hand-me-downs. For me, they're much more meaningful, and certainly more practical--can't beat free y'all!

 Take one of my bookcases for example; I always tell people about it because it was actually my mother’s in college! She kept it for years to come after graduating, and when it was time for me to venture off to UGA, I took it with me (after painting it a hideous purple…). It now sits prettier (I repainted it) in my living room holding my television and woven baskets that come in handy for additional storage--a great multi-tasking piece!

But I’d have to say that my favorite received so far, would have to be family chinaware.

As the only granddaughter on one side of the family, and the favorite first grandchild on both :), I get first dibs on older family items like these. Whether it be jewelry, photos, or Aunt Paige’s tiara from when she won Miss Lee County Fair, I am the deciding factor on whether my cousins will even have a chance at owning these heirlooms!

Now, if you know me in the least bit, then you're probably wondering what in the world I use said chinaware for because you know good and well I'm not making meals over here! 

Instead, I actually decorate with the collection, and I’m sharing how you can utilize yours in other places besides your dining room table below! 


Okay so I am very proud of this plate rack because I hung it all by myself! After rearranging multiple times to see if I liked big to small or small to big better, I finally settled with big up top to little on the bottom...
...and by that I mean I texted photos of the arrangements to my mother for her to ultimately decide! :)





I know this post is dedicated to my china pieces, but I HAVE to tell you about my cookie jar! I'm lucky to have a best friend who loves to go antique-ing--Carlee found this on one of her outings and gave it to me for my birthday.
It just so happened to match the other pieces in my kitchen perfectly, and has quickly become my newest obsession!

I'm sure you're wondering if I've been keeping cookies in it...sadly, I have not! Mostly because there's no one living with me that I could blame when I end up binge-eating all of them myself. So for now it just sits on it's matching china plate in the middle of my kitchen island...full of candy instead!
[hehe :)] 


I also use a platter as part of my kitchen table centerpiece! It holds my flowers (which are always fake because I can't seem to keep any alive at The Mint Cottage), a candle or two, and my bulldog S&P shakers.





My coffee station is probably my favorite little spot within my kitchen. For me, there's just something so serene about it first thing in the mornings, and I think my little heirlooms play a huge role in that! 
It may also have something to do with that fact I'm about to enjoy a much needed cup of coffee which I always look forward to! I adore my little sugar bowl, and have this weird obsession with keeping it filled to brim at all times...

I also have the creamer to complete the set, and I typically put it out when guests visit me at The Mint Cottage!

Either way, this blue and white corner is very special to me!

"Naked" Pound Cake Cupcakes

"Naked" Pound Cake Cupcakes

Let me introduce you to my pound cake, just in case y'all didn't get a chance to meet earlier this summer. She goes by Finicky, and she definitely lives up to that name!


Pound cake is my family's absolute favorite dessert that we make, but it's also the easiest to overbake. You have to know your oven very well, so maybe take it out to dinner, grab a drink together, really get to know one another! 

Typically, we leave it up to my Nana to make--she seems to have the magic touch. But today, Mom and I are taking things into our own hands and kitchen!


We decided to change it up a bit, though, and experiment with pound cake cupcakes.

 Here we go!


Y'all. I finally taught myself how to crack an egg with one hand, and I'm over-the-moon excited about it! It's the little things, right??




Even though we only live a couple minutes away from each other, Mom and I don't get the chance to bake/cook together nearly as much as we'd like, so it's always extra enjoyable when we're able to slice some time out for it!



I almost forgot how much I love playing in her kitchen. Don't get me wrong, I love my kitchen to pieces, but Mom's is a bit more spacious--plenty more room to make a mess!

Y'all. I LOVE my Kitchenaid mixer. It's such a great tool and doubles as a fab kitchen accessory when not in use! :)

Mom provides the kitchen, I provide the mixer! Teamwork makes the dream work, y'all.




Does it get any bAtter than this?! The answer is no. Batter is probably 70% of why I grew up loving to bake so much. It's arguably tastier than the final product, and honestly if you don't eat leftover batter than I'm not certain you can bake with us...just kidding!

Aunt Susan came by just in time to commence in the batter eating. We cleaned the bowl. She loves her pound cakes undercooked to say the least, we call her version "Pound Cake Pudding!"


We used a silicone cupcake pan (mostly because I left my metal one at home). With this kind of pan, you don't necessarily need cupcake tins, so we did without them. 

We baked two different batches so we could play with baking times. We began checking on the first batch at 15 minutes. They were still raw as all get out, so we popped them back in for another 5 minutes. At the 20 minute mark is when we performed "The Jiggle Test."


"The Jiggle Test" is obviously the scientific way to tell if your cakes are ready to come out of the oven. You just jiggle your pan a little bit this way, a little bit that way, and if none of the cupcake bellies are jiggling around, then they are ready for you to take them out of the oven and put them in your own bellies!

Total, we kept the first batch in for 25 minutes.


Following our taste test, we concluded that Batch #1 was deliciously successful--not too dry, not too undercooked. BUT we still had another batch to play with.


You know the old saying, "A watched pot never boils?" Well, I came up with a similar one: "A watched cake never bakes!"

I am no stranger to parking my behind in front an oven, watching the goods bake. I'll open the oven every now and then to see if whatever is in there looks different than how it appears through the glass. You would think that in my ripe old age of 25 I would've learned by now! Nope.

But I did see what a difference not opening the oven during the baking process makes on your timing! We kept batch #2 in the oven for 20 minutes without opening the oven once. After "The Jiggle Test" we decided to let it sit in there one more minute, for a total of 21 mins.

I felt like we had just won a game of Blackjack because 21 was our winning number!


Sadly, I had to run so couldn't stick around for the icing, but Mom did a pretty sweet job if you ask me!

Ran so fast I forgot to take my apron off, so here's me riding around town embracing it! Not a bad outfit if you ask me.




You can do so much with these cupcakes! Pair them with your favorite icing, fill 'em up with something yummy, or top them with whipped cream and berries. Can't go wrong in my opinion!
